Baked sweet potato with spicy feta-olive stuffing

Baked potatoes are one of those things that we always make on the camp fire back home. It’s easy, cheap and tastes delicious. Now as many veggies are quite expensive here in Norway, this recipe can be simplified to your needs and wishes and still provide you with a great tasting meal!

Ingredients for 2 persons:

  • 2 medium sized sweet potatoes
  • 150 grams of Feta cheese
  • Half a red onion, cut finely
  • 1 clove of garlic, cut finely
  • ¼ of a red pepper, cut in thin rings (optional)
  • Half a jar of black olives, sliced
  • 1 tsp. coriander seed
  • 1 tsp. of paprika powder
  • 1 tsp. chili powder
  • 6 tbsp. of olive oil


  1. Make a campfire or heat up the oven to 175˚C
  2. Wrap the potatoes tightly in aluminum foil and pierce several holes into the package
  3. Bake them for 60 minutes
  4. Now for the filling: mix all ingredients with some salt and pepper and give it some time to soak up all those wonderful flavors
  5. Test if they are ready after 1 hour, cut open and add filling
  6. Garnish with same parsley and enjoy your baked sweet potato!
